Karele ki Sabji – Bitter Gourd Recipe

Ingredients required to make Karela sabji –
Bitter gourd – 5
Oil – 4 tbsp
Asafoetida – 1 pinch
Cumin seeds – half a tablespoon
Mango powder – half a table spoon (optional)
Red chili powder – 1 tbsp
Turmeric powder – half a table spoon
Coriander Powder – 2 tbsp
Fennel – 1 tbsp
salt to taste
Method of preparation of bitter gourd –
First, wash and dry the bitter gourd, then remove the footstalk of the bitter gourd and cut it into round thin pieces.
Now heat the oil in the pan, then add cumin and asafetida to it. After the cumin seeds crackle, add chopped bitter gourd pieces, cook the bitter gourd for 5 to 6 minutes.
When the bitter gourd becomes slightly soft then add red chili powder, turmeric powder, coriander powder and fennel and mix well, now add salt and mango powder to it, cook the bitter gourd well and keep stirring it occasionally.
When the bitter gourd vegetables are cooked properly, turn off the gas.
A delicious bitter gourd vegetable (karele ki sabji) is ready, serve it with roti or paratha.
