Batata Vada Recipe/ Aloo Vada

Necessary Ingredients –
To make potato balls –
Potato – 400 grams (4 medium size)
Green Chili – 2 to 3
Onion – 1 medium size
Garlic – four to five
Ginger – 1 inch
Coriander – finely chopped
Mint – 2 tbsp (optional)
A small slice of Kerry raw mango or half a teaspoon Amchur powder (optional)
Red chili – half a tablespoon
Turmeric – half a table spoon
Cumin – half a tablespoon
Coriander Powder – 1 tablespoon
Garam Masala – half a tablespoon
Fennel – 1 tablespoon
Salt to taste
Sugar – a quarter tablespoon
Ingredients required for slurry –
Gram flour – two cups
Baking Soda – One fourth tablespoon
Celery – one fourth tablepoon
Turmeric – one fourth tablespoon
Salt to taste
Batata Vada Recipe-
First of all, mix water in gram flour to prepare the batter. The solution should not be too thin or too thick. Now mix a little celery, turmeric, salt and a little baking soda in the batter. Whisk the batter well and keep it for 5 to 10 minutes.
Now in the mixer, grind green chillies, onion, garlic, mint, kerry, ginger and make a paste.
Boil the potatoes and cool them and mash them.
Now put the pan on the gas, Add 2 tablespoons oil to it, add some mustard seeds, cumin seeds, when the mustard seeds and cumin seeds crackle, add the paste made into it. When the mixture starts separating oil, then add red chilli, coriander powder, turmeric, garam masala, sugar, fennel and salt and roast all the spices well on low heat. Mix everything well and turn off the gas.
Now add this spice to the mashed potato and mix well, mix the mixture well and make small balls.
Now put the pan on the gas to fry, heat the oil.
Now take potato ball, dip it in gram flour solution and wrap it in hot oil.
Fry the batata vada on low heat till they turn golden brown.
Delicious batata vada is ready, take them out in a plate and serve with coriander sauce.
