How to Make Moong Dal Kachori, Recipe
Necessary ingredients for Kachori-
To make dough –
Refined flour – 2 cups
Oil – 1 tbsp
Salt half teaspoon
For stuffing –
Moong Dal (without peel) – 250 grams (soaked in water for 8 to 10 hours)
Green chili – two to three finely chopped
Coriander Powder – 1 tbsp
Cumin seeds – half a tablespoon
Red chili – half a tablespoon
Asafoetida – 1/4 tablespoon
Mango powder – 1 tbsp
Black pepper – three to four coarsely ground
Cloves – two to three coarsely ground
Garam Masala – half a table spoon
Turmeric powder – half a table spoon
Gram flour – three to four tablespoon
Fennel – 1 tablespoon
Salt to taste
Method of preparation of Moong Dal Kachori –
First take maida, add salt and oil to it and mix well and knead it with a little water, the dough should be soft, cover it for 15 to 20 minutes.
To make the stuffing masala, firstly, grind the soaked dal coarsely. Now put three to four spoons of oil in a pan. When the oil is hot, add cumin seeds, asafoetida and green chili. Now add coriander powder, red chili powder, black pepper ,cloves , and a little turmeric.
Fry the spices on low heat lightly and add dal to it, now add salt, fennel, mango powder (aamchur powder) and garam masala. Now add some gram flour and fry well . Fry on low heat.
Now add a glass of water and cook it well in low heat , The water will dry up completely . Stuffing is ready. Make small balls of the stuffing.
Now to make Moong Dal Kachori, take a dough of dough and keep it on your hand and make it like a bowl with the help of fingers and put the stuffing in this bowl and close it well.

Now heat the oil in the pan for frying; When the oil is warm-hot, add kachoris to it. Keep the gas low and fry the kachoris till they turn golden brown! Kachori will become crispy only by keeping it on low heat.
