Aam ki Launji – Raw Mango Sweet Chutney

Aam Ki Launji Recipe – Keri Launji

Ingredients required –

Raw Mango – 3 medium size

Jaggery or Sugar – Three quarters cup

Oil – 5 tbsp

Coriander Powder – 3 tbsp

Fennel seeds – 1 tbsp

Turmeric – half a table spoon

Red chili powder – half a tbsp

Cumin seeds – half table spoon

Mustard – 1/4 Table Spoon

Salt to taste

Method of making raw mango chutney- How to make kairi ki launji

First of all, wash the raw mangoes and cut them into small pieces, you can also use them without peeling them.

Now take 2 glasses of water in a pan and when it comes to a boiling point, put all the pieces of raw mango in it. We have to cook it for 2 minutes. When cooked, take out the pieces from the water.

Now take a pan, add 5 tablespoons oil to it, when oil is hot, add mustard seeds, cumin seeds and fennel seeds and fry it a little on low heat, now add coriander powder, turmeric and red chili powder and fry it a little, now add raw mango pieces and mix it.

Now add half a cup of water and mix it well and add salt and let it cook for 4 to 5 minutes.

Now add the chopped jaggery to it and mix it well and cook until the jaggery dissolves completely.

Turn off the gas when the lauji (chutney) is a little thick, the delicious aam ki lauji is ready, you can serve it with any chapati paratha.

Keep the aam ki launji (Raw Mango Sweet Chutney) in the refrigerator and eat it for 10 to 12 days.
