Bharwa Baingan Recipe – Stuffed Eggplant
Brinjal vegetable is excellent in taste. We can make it in different ways like brinjal bharta, brinjal curry, but the most liked vegetable in it is the stuffed brinjal vegetable, which we eat with great fervor. You will also like this vegetable very much.

How to Make Bharwa Baingan (Stuffed Eggplant)
Ingredients required to make Bharwa Baingan-
Eggplant – 6 to 7 (small size)
Onion – One (medium size)
Garlic – three to four buds
Green chili – two to three
Ginger – 1 inch
Coriander Powder – 3 to 4 tbsp
Turmeric powder – half a table spoon
Red chili powder – 1 tbsp
Peanut – half a cup
Sesame – 1 tbsp
Mango powder (aamchur powder) – half a tablespoon (optional)
Garam Masala – half a tablespoon
Sugar – 1/4 tbsp
Cumin seeds – 1 tbsp
Asafoetida – 1/4 tbsp
Mustard – half table spoon
Oil – 4 to 5 tablespoons
Potato – a medium size (optional)
How to make Bharwa Baingan (Stuffed Eggplant) –
First take small sized brinjals and wash them thoroughly with water. You can also take long brinjals.
Grind the peanuts coarsely and similarly grind the sesame seeds coarsely as well.
Now make green chili, garlic, onion and ginger paste in the mixer.
Now take a pan to make the masala, add three to four tablespoons of oil to it, add mustard seeds, cumin seeds, and asafoetida. When the mustard seeds and cumin seeds crackle, add the paste into it, fry it on medium flame.
Now add red chili powder, coriander powder, turmeric powder.
Now add Aamchur (mango powder), sugar, salt and garam masala to this spice and cook the spices well on medium heat.
When the spice separates the oil, add peanut powder and sesame powder to it and cook a little more! Now the stuffing masala is ready.
Now take the eggplant and make an incision from one side.
Fill the chopped brinjals with spices and keep them pressed well, similarly prepare all the brinjals.
Now heat the oil in the pan, if the oil is hot, then drop the eggplant one by one in the oil, if you want to add potatoes, then cut the potatoes in long shape and put them in it and cover the pan and cook for 5 minutes.
After 5 minutes check the brinjals and flip them over, cover again and cook on low heat.
Turn the eggplant in a little while, when the eggplant and potato become soft then turn off the gas, add the remaining spices to it.
Delicious Bharwa Baingan is ready, serve it with paratha or chapati.
